Pulled Pork in Oven - timing issue

Jesstoni | Dec 6, 201406:18 AM     3

I make pulled pork using a bone in pork butt all the time. I have a bit of a timing issue this time around though. I generally cook it for about 12-13 hours at 225 to get to the ideal temp for pulling. I need to have it ready to go at 9am tomorrow morning. Normally I would put it in the oven at around 6pm, but we have plans at a friend's house this evening and we are leaving the house at 4pm. Should I put it in at 4pm on a very low temp and then raise a bit when we get home around 8pm? or just put it in at 4pm at 225 and then get up at the crack of dawn to pull it out of the oven in the morning? Thanks!
