Help - Pulled Pork in Oven, need to leave for the night

I'm starting the prep for my apps for my bf's Golden Globes party on Sunday (I am more into movie-inspired food than movies) and intended on getting my 10 lb pork butt in the oven this morning for a 6 hour stint at 300 degrees F. However, I didn't get it in until 1:30pm and I have to leave the house at 6:30! Can I pop it in the fridge and start cooking again tomorrow morning? What's the deal here? I've searched the archives and haven't found anyone else irresponsible enough to have this problem.

I'm making a hybrid pulled pork/goulash (Grand Budapest Goulash Sliders), so I've got the pork with a paprika rub partially immersed in a tomato/chicken broth sauce. Somehow my meat thermometer got lost in moving so I have no insight into how it's doing temperature-wise. Please help :)
