OK, count me as blown away. I am watching a youtube video about puff pastry, and this Anna Olson person in the video has stated (and shown) that the new method of rolling it is to ENCASE THE DOUGH IN THE BUTTER, rather than the opposite. She proceeds as usual from there with her turns.

I am speechless. Can this possibly work?
