I'm trying recreate a pudding recipe I had a long time ago. I thought it was Indian pudding, but the recipes I'm finding for Indian pudding use molasses and the one I had used maple syrup. But I think it was corn-based and rather solid (not jiggly like chocolate pudding). Any ideas? Also, I'm hoping I'm sure the recipe is milk-based -- and I'd love to use non-dairy soy milk instead. So...please give any input on whether there could be some substituting...Thanks!
