Pudding in a pinch

What is your go to pudding or dessert when you get a craving for one? Do you have a recipe you follow, or is it something you can just magic up ?

I quite often fancy something sweet after my supper, but my husband is a fussy dessert eater, well, lets re-phrase that to a fussy anything sweet eater! So, I never have a pudding planned, but I do have a little trick up my sleeve.

When I was growing up my parents made a lot of crumbles. I still make crumble, but I vary flavours and add little twists to the humble ones my parents always served up. I grab a ramekin from the cupboard, fill it with any fruit I have on hand, toss in some seasoning, then top with a simple mix of butter, sugar and flour. By the time it has baked, I am more than ready to scoff the whole lot.

Tonight is on of those nights. I had some blueberries and cherries on hand, so I tossed them in a tiny amount of molasses and a grating of fresh ginger. I topped it with a crumble mix that included some oats, a little more grated ginger and some grated orange rind. By the end of this process it dawned on me, I'm not sure I've ever used a recipe for crumble.
