Outside of Frederick MD is Hemps Meat. They make sausage, sell country hams, sliced meat... also scrapple and pudding. While I'm familiar with scrapple, I bought a pound of pudding to try. One fried slice was enough. Had to look it up. It was not blood or liver based, more like a combination head cheese (not aspic) and scrapple without the body of corn meal. Fried it up on my Favorite 8 skillet, browned and flipped, barely holding together, ate it with saltines. I finished the slice only because I had the image of my Mother looking over my shoulder.
Maybe like Carolina Hash in a loaf, although I haven't had that just yet.... I think the fox is going to get the rest.
