proud of my yellow pepper suace

I whipped up a great yellow pepper suace to accompany seafood (bay scallops, calamari, shrimp) tossed with pesto...and thought I would share.

I charred 3 large yellow peppers on the grill, then peeled, seeded them and tossed them into my waring blender. I also grilled till nicely soft one large vadalia onion (thick slices) and tossed that into the blender too. I added about a tablesoon of freshly sqeezed lemon juice and a couple of tablespoons of olive oil and, or course, sea salt and white pepper to taste and pureed.
Wow! Really great flavor.

I piled the pesto seafood in the center of the plate and poured some sauce around it. Served with jasmine rice and hericot vert.
