Proof tonight - Chef's menu or a la carte?

I love the idea of not having a choice, i.e. the chef cooks what he/she wants - not to mention the wine pairings. But they seem awfully proud of their charcuterie, none of which shows up on the sample chef's menu. Thoughts?
