Progressive Dinner in Penn Quarter

I was thinking about surprising my bf the Sunday of Labor Day by putting together a progressive dinner in Penn Quarter. I was thinking maybe drinks and the crunchy spinach dish at Rasika. And definitely dessert at CoCo Sala (he's never been!). But what do I do in between?

I've never done this before so I'm looking for some advice. Is it best to go to a bar area and order entrees or do you think small plates would work best? I figured we could either go to Zola or Poste for entrees...since they both seem to have a bar area you can dine in (although it's been awhile since I've been to either). Or PS7 for small plates and/or entrees...he loves the tuna tartar sliders so I can't imagine how we can get out of there without ordering them.

We could also do small plates at Proof...and sit outside.

If someone has done a progressive dinner in this part of time please tell me what you've done so I can brainstorm some ideas.
