Professional Chinese Bakers/Mandarin Speakers

I have been using a Chinese levening agent for Chinese buns (cha siu bao) called "An-feng." Can anybody tell me what this is, or what the English term might be?

In Chinese characters "An-feng" is a "gold" radical coupled with the character for "safety."
