Problem with an Aloo Tikki recipe (Indian potato patty)

walker | Jan 31, 201512:11 PM

I looked at various Aloo Tikki recipes; the one I chose had a tablespoon of besan (garbanzo flour). I let them brown before I tried flipping over but they fell apart. They were edible but not so pretty. When I formed them they stayed together ok. Some recipes call for bread or crumbs on inside, some for crumbs on outside.

Some Indian recipes call for corn flour. In a Wms-Sonoma cookbook when a recipe calls for corn flour they put cornstarch in parenthesis. But, there is such a thing as corn flour.
