Check out the current Chronicle profile of Harrell Ranch's dry-aged Wagyu beef. That's the breed of Japan's legendary Kobe beef. They ship out to French Laundry and Charlie Trotter's and sell the product in-town at The Meat Shop (948 Peyton Gin Road). Unbelievable, considering the rarity of dry-aged or prime beef of any quality. In the accompanying photo the marbling looks pretty intense. Anyone tried the stuff?
Now that I think about it, I had a small order of Kobe beef sashimi at Musashino about 2 months ago. It was barely seared, partially frozen and as good as toro. I bet it was from Harrell Ranch.
