Primavera Chilaquiles, and elsewhere?

I've been craving good chilaquiles for a long time, so decided to try the Primavera version at their Ferry Market stand today, and was disappointed. I didn't want the scrambled eggs that come with them, so they charged me less and threw in a few freshly made tortillas (the best part of the breakfast)...but the chilaquiles themselves were cold (!) and the beans were only lukewarm. The chipotle sauce was nicely spicy,(though I prefer my chilaquiles with salsa verde rather than chipotle, but that is a matter of personal taste), but the tortillas were too crisp (ie not saucy enough) for my taste. I also thought there was a bit too much crema and cheese on top, not that I didn't eat all the creama...oddly enough, what really stood out (besides good tortillas) was the little sprig of cilantro: would like to know their supplier, as it was really fresh and way above average in flavor....

So where else should I be looking for chilaquiles, especially if made with salsa verde, and without eggs? any ideas?
