Prickly Pear advice needed

i'd like to make a prickly pear dessert for a dinner party later this week. i have a simple recipe that calls for drizzling anise liqueur and superfine sugar over sliced prickly pears, chilling them, then dusting them with cinnamon. the recipe calls for *white* prickly pears. first question: what's the difference? second: can i substitute the regular pink ones? third: any advice for picking out good ones?

i've never cooked with prickly pears before, so any relevant advice is appreciated....
