How to prevent breaded fish from getting too dry?

Tried making breaded fish today by baking rock fish in a the oven. Dipped it in tempura mix, then beaten eggs, before covering it with panko.

I usually try to make food for the rest of the week but I'm finding the fish is drying out pretty quickly so that the outside gets kinda hard.

What can I do differently so that this doesn't happen?
