Preserving fruit: lemon, vinegar, whey?

lisaleira | Jun 12, 201612:21 PM

I have a ton of papaya that I don't feel like eating or cooking with now and I can't freeze it. I was thinking what are ways to ensure it stays relatively not-spoiled for a while?

Here were some ideas I had, curious if you'd ever tried!

- mixing the papaya into a mash or slushy thing (I don't want to juice it) and mixing a lot of lemon juice in it, thinking that should preserve it for some time
- mixing an amount of apple cider vinegar (the kind you buy with the mother) into the same papaya slush- my theory is, wouldn't the bacteria in the ACV be the bacteria that grew if any grew? Or like when you preserve ginger in ACV and something sweet?
- mixing some whey or kombucha into said papaya slushie- would that cause only good bacteria to grow, if any, while its in the fridge?
- if you mix the papaya slushie within yogurt itself, would it stay unspoiled, like the yogurts that have fruit bottoms or any yogurt that has fruit mixed in it?

I tbjnk those are my main ideas and thinking about trying the lemon/papaya slushie idea and see how long it seems to last. Any thoughts? Or mistakes in my reasoning ? :)
