Preserving (freeze, jam, jar) peaches and figs

We love peaches - peach crostatas, cakes and pies. Also love them grilled with pork, as jams and preserved.
We also love fig jam and are wondering how figs freeze.
1. Freezing peaches: Can we do halves and what is the texture like if we want to grill them in the winter? What is the easiest way to freeze them? Skin on or off? Do we have to blanch? Is this realiable without blanching? http://www.edibleperspective.com/home...

2. Has anyone tried to IQF halved figs? Wondering about using them for cakes or apps in the winter? I would like to make my own jam. Any ideas? Skin off I am pretty sure!
