Preserving Foie Gras

Can anyone give me some guidance for preserving foie gras? I've heard about some technique of partially cooking it and storing it in a jar in the fridge, where it'll keep for a few weeks, but I can't find any detailed info.

I generally cook for two. There's no way the two of us could polish off a whole liver in one night, and I've tried buying just a few vacuum-packed slices at a time, but I find the quality to be much less consistent.
