Prepping challah bread in advance?

I'd like to make challah for guests for Rosh Hashanah dinner, but will be away the night before and won't be home until about 4 hours before dinner. That's not enough time to prepare the dough, and do all the rising. Can I start any stages of baking the day before, maybe freezing or fridging the dough after one of the risings? Thank you for your advice.
