Prep today, grill tomorrow... Is that OK with these veggies?

Tomorrow, I'm going to be grilling:

- eggplant
- baby artichokes
- zucchini
- red onion
- leeks
- red and orange pepper

with a simple olive oil and seasoning baste.

Can I prep the veggies today and grill tomorrow?

Specifically:

1) Eggplant

Can I slice salt them today and grill tomorrow

2) Artichokes

I understand that after prepping you are supposed to put them in lemon / vinegar water to keep them from turning brown.

Should they be in that overnight?

I'd guess that it would be totally Ok to chop these up and salt and pepper these overnight.

- zucchini
- red onion
- leeks
- red and orange pepper
