I was making beef stew in my crock today and I cut up my potatoes and carrots last night. I've done this before. I put them in a ziploc with a generous amt of oil and stick in in the fridge. But this time over half the potatoes were black. I tried to cut the black parts off but I didn't have the time. I fished out the carrots that were fine -although the were swimming in the oil that had picked up some of the potato grey. I have a few questions:
What went wrong this time?
Are my carrots OK? I did rinse them off.
