A Pound of Lovely Dover Sole - No Parsley. How Would you Cook it for Dinner??

Hi all-

I bought a pound of sole because it was on sale, wild, green certified, etc. and it looked great. But I had no plan for it and now that I'm looking online every recipe I find has parsley in it, which of course I don't have. Weather here is kind of lousy and I'm not going out just for parsley, so wondering if anyone has any ideas for this fish that is supposed to be tonight's poorly planned dinner? :)

I have fresh rosemary and thyme but they are both pretty old. I have lemon. I have spices in the pantry but no dried oregano, basil, or parsley (all of which I'm thinking would have been helpful here...)

I was thinking about sprinkling sumac on it and baking it, but last time I baked a whitefish it came out kind of gross....

So any thoughts?
