Poultry for Passover - traditional recipe needed!

I am hosting Passover for the first time! It will be small, 5 people, and brisket will be served for the other night, so Im thinking chicken or turkey.

Caveat - My father is a picky eater, so no artichokes, olives, etc.

I guess this screams roast chicken, but I'm hoping to do something a little different, but classic Passover. Any ideas or is this a lost cause? Should I just go with chicken marabella?
