My childbirth education class is once a week at dinnertime, three hours long & full of enhanced-appetite-pregnant ladies. (There are 8 couples & 2 instructors) We bring "snacks", but like I said, it's dinner time & we're pregnant. Last week I did a spinach pie w/ mushroom, artichoke, & cheese. It was the hearty-est thing there & went over really well.
So the question is, Now What? I've got several more weeks & need some good ideas.
-not too expensive (14-16 folks)
-not too much work (I don't want to make others feel bad if they don't have the time/ability)
-easy to eat/portion (paper plates/plastic forks)
-must travel via car-less pregnant New Yorker (DH meets me there so I will carry this)
Anybody got a great recipe for veggie Jamaican patties?
