Potatoes that won't cook - continued - needs investigation?

There is an original thread from 2008, [mod note: The poster is referring to https://www.chowhound.com/post/potato... ] in which people spoke about potatoes that won't cook, and in which I posted, in 2017, that potatoes are not cooking. I refer primarily to boiling potatoes, which I have been doing for 50 years, although potatoes cooked long in stew, do not cook either. There had been a rash of green potatoes being sold; maybe this is a clue. It is now 2020. There is something wrong, either with the potatoes themselves, or changes in the water used that halts the necessary changes for potatoes to cook.

In the original thread, I just posted that, in my other-customers-in-the-store surveys, at first customers tell me they have no problems and when they boil potatoes they are fine and cooked through. What is now being added is that they are microwaving them first. (I couldn't believe it). So, given that, ultimately, their potatoes are cooked through, no one is making a proper stink about this phenomena, nor getting it addressed. No potato grower association I have contacted has been forthcoming with an answer. I am no chemist, but I am 100% certain that the boiling point of water has not changed. I have not purchased a certified organic potato to see if there is a difference, but having grown potatoes, I should not think there would be a difference in the ability to have a thoroughly cooked potato.
