Post-osso bucco leftover gremolata, now what?

So the osso bucco was good but adding the gremolata elevated it to fabulous. What else can I eat with this delish lemony-garlicky green stuff?

After pulling off the mere handsful it took to make the gremolata, I am left with a big bush of Italian flat leaf parsley. What should I make with the leftover parsley?
