Porkchops?

As our supermarket strike continues here in LA, I'm doing more shopping at TJs. They have a lot of Niman Ranch products, all at 50% off the website price! I've tried the bacon (excellent), and yesterday bought some fairly thick (1-1/4 inch) boneless porkchops.

Aside from just grilling them, anyone have any good ideas for these.

PS. Also bought the premade and cooked ribs - haven't tried them but am keeping my fingers crossed.
