Two months ago I stopped for lunch in Bakersfield on my way to Palm Springs. I was interested in checking out PorkChop and Bubba's BBQ, as the owners are experienced competitors on the KCBS contest circuit. Even though I arrived after 1pm, the counter-service restaurant was still busy with diners filling the booths and outdoor tables. This 1.5 year-old restaurant is very popular.
I ordered the Three meats and two sides, $22.50, packed to-go for a small taste on site and saving the rest for later. Pit beef, a local specialty I’ve wanted to try for years, was fall-apart tender shoulder clod with little smoke influence. St Louis spares had a tasty rub and revved up with a touch of the raspberry-chipotle sauce. Brisket presented with lean and fatty portions was buttery soft with a velvety mouthfeel and my favorite of three meats. Chili beans were meaty, complex and very tasty. Better yet, the greaseless Fried okra dipped in a spicy mayo. A slice of white bread with pickles and onions completed the combo. My leftovers fed me for two more meals. I had fun going back and forth tasting the different sauces with the meats.
Brandon and Courtney were Grand Champions in Elk Grove in 2015 and have competed in the American Royal invitational. They asked me to say “hi” to their CBBQA and KCBS families.
PorkChop & Bubba's was a great pit stop on the long drive south. Excellent food, friendly staff, clean restroom, plenty of parking, and less than two blocks away from the iconic Dewar's (my mandatory stop when I'm near Bakersfield).
