I'm planning on making the Zuni mock porchetta (at last!) on Friday night. I defrosted my local frozen pork shoulder starting on Sat and on Monday it was totally defrosted. Seasoned last night (Tues) for a 3 day marinade.
Goin says loosely cover pork. I am worried. If it's in the refrigerator for 5+ days at thawed temp, will it be okay?
