Pork Roast in Stock Pot?

I’m planning to roast a pork butt from an ATK recipe that specifically says not to use a non-stick roasting pan as it may make the roast too brown. I only own a nonstick roasting pan. Should I do it in my 8 qt stock pot? 12” fry-pan? I have a half sheet pan also but I usually like to put aluminum foil in it to help with clean up but I need the pan drippings for my gravy so that kind of means no foil. What’s the best tool to use for this roast in this situation?
