Pork Roast for 20 people

Hi, I am hosting Christmas dinner for 20 people, and have two 6.5 lb pork loin top loin roasts to make. I'd like to slow roast them in the oven or slow cooker. So far I have figured out that I could oven roast them at 325 degrees for 20 mins per pound, but not sure about slow cooker. I'm also roasting some potatoes and carrots. Can I do all this together using two roasting pans--one each with pork, potatoes and carrots? Still going by the 325 degree/20 mins per pound theory? Thanks for any help with this!
