I've been bestowed with some lovely pieces of local pork and now I'm trying to figure out what to do with them.
Although I love eating pork I can't say I've spent much time cooking it, so I'm at a loss for what to do with all these lovely pieces of meat. Some of it I will freeze, but I would like to use the kidney and the belly this week.
Anyone have any recipe ideas? I was thinking of doing some sort of salad with the kidney, perhaps incorporating some of my CSA veggies (Beets, Celeriac, Rutabaga, Carrots), but I'm not really sure how. I was given the advice to cook the kidney quite briefly as, apparently, overcooked pork kidney tastes awful.
Your favorite Pork Belly recipes would be much appreciated as well.
