Pork Chops

Is there a butcher shop in NYC to buy pork chops that don’t taste like particle board? A while ago I bought some at the French Butcher that reminded me of what pork chops were like 25+ years ago (and what they’re still like outside the US). But the next pair I acquired there reverted to the usual standard. Is there a place that has both quality and consistency?
