What started as a simple triple date has evolved into a dinner party for 12- and as happy as I am to see all of my lovely friends, I'm not very accustomed to cooking for this number. Bone-in pork sirloin chops are on sale, so I'd like to use those.

I was hoping to do a roasted chop with apples (maybe grated?) and horseradish, possibly paired with a side of roasted butternut squash with goat cheese.

No real special diets, but I and another friend are very picky- neither of us like mushy textures and only like certain veggies. Any suggestions would be greatly appreciated- my friends won't care as long as they're fed, but I'd love to make something really good.
