Pork Belly Skewers

I am going to cook pork belly with a yakatori sauce on skewers after a suggestion from a website. I am however concerned that the pork might be a little tough/chewy as I have only either slow roasted or slow cooked pork belly before. Has anyone tried using pork belly in this way before? And if so any advice? Thanks in advance.
