I made a trip to Cafe Rouge on 4th St in Berkeley this weekend, to find them out of pork belly. They clarified that the bone-in stuff was actually piglet belly. The piglet comes in Tuesdays, gets broken down (in butchery parlance), and if not quickly sold, goes into the kitchen.

They also had salt and pepper cured foie gras. Oohhh...
