I read with interest the popover thread below. I just wanted to see if anyone else has tried making then in the silicone pans? I received a silicone muffin pan for Xmas a year ago and have been making my popovers in them ever since. I was very doubtful they would work but they make the most light, airy and tender popovers. I have made traditional as well as cheese with the same results. I use Julia Child's basic recipe which is almost the exact same as is quoted in the earlier threads. I have no idea of the "science" behind it as I always had made them in preheated tin pans in the past. I thought you *had* to have a hot pan to made good popovers! It was really just a lark to try the silicone. And the best thing? The just fall right out of the pan so no deflating!
