pomelo/pummelo sashimi question

I bought my first pummelo the other day after reading about them in Sunset. I'm planning on removing the peel and membrane and dicing it up with avocado, green onions, chiles, and cilantro. I would like to add some cubes of sashimi grade fish to the dish, do you think yellowtail, albacore, salmon, or halibut would work best. I try to stay away from snapper and cod for fisheries management issues. Ideas or any other pomelo recipes? Thanks.
