In the DC area, there are many places to get Peruvian chicken, which is cooked on a rotisserie with some great flavoring. Some time ago, the Fairfax County health inspectors tipped the hand of one of the restos recipe in a report. This is requested every few months on the DC board, and I seem to be the one to repost it (though I wasn't the one to first find or post the report). So since I just did there again, I figured I'd spread it wider.
It's not a complete recipe, but it's a good lead. I've never taken this and made anything super close to what you get in the restos, but I also don't have a rotisserie setup. Personally, I've taken where I got to with the following info and modified it to make it my own, which currently includes smoking the chicken to cook it.
