I am currently having a polenta obsession. Sometimes I buy the hard polenta at the supermarket and grill it on the forman grill, this is usually pretty good. I tried making soft polenta from a box the other day and it was not very good, i forget the brand but it was italian and about $2 at zabars. I followed the directions and it was harder than i was looking for and did not taste very good.
How can i get it really creamy? Is there a good brand or recipe? How do others make polenta?
