I was in a simple bistrot tonight that JT last year gave two good reviews to. I ordered la poire rôtie aux amandes for dessert. I expected a warm dish and expected some wait until I received it. I was surprised when the dessert came rather quickly from the kitchen, and I figured it probably would have been microwaved (in which case, possibly some distortion of texture). But instead, it turned out to have been a dish straight out of the refrigerator and served cold. I've never made this dish and don't recall even having seen a recipe before. Is this the normal way such a dish is served?
