Poached turkey miracle recipe?

This sounds almost too simple and easy for it to be true, but my friend tried this last week (from a recipe found on the D'Artagnan website) and said it was miraculous. Moist, flavorful meat, crispy skin...

Basically you poach a whole turkey in a well-seasoned court boullion for 40 minutes, turn off the heat, cover and let sit for 4 hours and then refrigerate. The next day you preheat the oven to 475f, put the turkey in, and after a half hour turn off the heat and let it sit there until you're ready to serve it.

Has anyone ever tried this? I can't imagine eating any more turkey at this point, but I'm very intrigued.
