a plethera of pineapple

Ok, I got carried away and bit too enthusiastic about inexpensive whole pineapples and now am overrun with the lovely, chunked (by me), sweet and juicy fruit. After a bit of searching I'm wondering if the only recipe for a dessert using pineapple is the good old upside down cake!? I'd love some other options. Has anyone tried Sir Gawain's cake with pineapple? I recently made Bill's Coconut Bread and thought it was yummy and may improvise and make it pina colada bread by adding in some of the fruit. Any other ideas? Thanks!
