hi all,

am planning on making plantains on monday night. have never really done it before. i know that when i have had them at restaurants they are either sticky and sweet, or dry and salty.

i need a primer on plantains! how ripe should they be and how do i tell? how do i make each diff kind and which do you recommend as an accompaniment to shrimp tacos?
