Planning Piedmont in Nov 2021

I'm going to Piedmont in early November, and based on the many posts here, I've so far decided to go to Veglio, La Cocinella, and Guido. I also wanted to go to Veglio and La Cocinella twice, because there seems to be uniform consensus on how great they are, and their menus seems large enough to explore with two meals. However, I can do one of them twice, and one of them once IF I want to do da Bardon as well, which seems quite interesting and different in its selection of meat based second course dishes. So, what do you recommend: i) 2xVelgio + 2xCocinella, ii) 1xVeglio + 1xBardon + 2xCocinella, or iii)2xVeglio + 1xBardon + 1xCocinella? Also, is there a difference in what is served at da Bardon for lunch vs dinner?

FYI 1: My second trip to Piedmont, and last time I went to Il Centro and Trattoria Della Posta, and don't want to repeat those.

FYI 2: Also going to Valle d'Aosta, will report back on restaurants I try there!
