Help!: Planning a Once-in-a-Lifetime Trip

I am in the early stages of planning a special occasion trip to San Francisco, where the FOCUS of our visit will be the food - namely, the culinary treasures of the Bay Area. I expect to be there for three or four nights. Right now, I expect that French Laundry and Chez Panisse will fill two of our nights, although it is (barely) possible that I could be talked out of that decision. The other night or two is still up in the air. I am strongly leaning towards Oliveto in Oakland. I am also considering Swan Oyster Depot for a change of pace.

Note: I have never been to California. Any recommendations as to "absolute musts" would be greatly appreciated. There are no restrictions as to cuisines. We like everything. We just are looking for "the best" (whatever that means!).

Incidentally, we are beer buffs, and are planning on putting in some hours at Toronado, and are also condiering a trip to Sierra Nevada, Anderson Valley, or North Coast Brewing.
