Planning Easter Brunch for Multiple Picky Adult Eaters

My wife's family is coming over for Easter next week. We have a large entertaining space so we end up hosting some holidays. The issue I have is that my wife's family are all extremely picky eaters. Her mother and sister are gluten free and sugar free. Her sister's husband is a recent strict Paleo dieter., and finally my wife's brother is a strict vegan. My wife and I are the ones who pretty much eat everything, but she gets upset when I raise concerns about hosting brunch. I am at a loss on what to do ,especially that my wife had promised her mother without speaking to me that we will be in charge of cooking the entire brunch
