Help! I'm hosting a dinner party tomorrow night for another couple and have to manage a wide range of dietary restrictions.
One guest is a full-on vegetarian, one is a pescatarian, and two (including myself) REALLY enjoy meat. Now I know I can make a salad/pasta with no meat/fish for everyone to share, separate steaks for the meat eaters, and a fish for the pescatarian, but to me that just sounds like a lot of work. I want to be able to enjoy my guest's company, and not be rushing around the kitchen because the timing of every various dish is stacked differently. That being said, I would (selfishly) like to incorporate some type of red meat into the meal.
Any suggestions? I'm an incredibly competent at-home chef, with all the kitchen toys (sous-vide, mixers, etc) at my disposal.
