Places to try in Paris in 3+ days

Hi

I am visiting Paris (from Portland) for the first time for 3 and a half days in February. After reading this board on my list are La Regalade, Ferme St. Huber and Androuet (for cheese) and Angelina for some chocolate/Africain. Also rue Moffetard open market for food/people watching.

Other reco's of good places to try in the good value for money, regional/french cooking either a la carte or prix fixe would be appreciated.

No hotel yet so arrondissements does not matter, reco's of pensions/non chain hotels under $50 or so would be great as well
