I've researched the board as best I can, and haven't seen this specific topic addressed.
Plenty of recommendations for oysters, of course, some notes that they are fine even in the summer (months with an "r").
I ask because I went to Huitrerie Regis - highly recommended on this board and elsewhere - in June two years ago, ordered a dozen of the large Speciales de Claires, with a very good Sancerre, and was... unimpressed. The oysters were too "flat" to me. Maybe "creamy" is a decent description. But they didn't have the real taste of the sea I expect from oysters (for reference, I come from the Northeastern U.S. - love most of the oysters there - and live in CA now and am quite happy even with the lowly Myagis available on ice at my local farmer's market.
I've eaten oysters at least once in Paris in the fall (this was 8 years ago now) and liked them just fine.
In my mind I wrote it off as "well, oysters just aren't as good in June". Browsing here recently, it occurred to me that I may well be missing something. I suppose it's possible that I just hit Regis on a bad day, but the oysters didn't taste off in any way.
Are there better oyster choices in June if my taste in oysters runs to briny? I generally prefer large to smaller ones, but that's not a deal breaker. Do you locals still eat oysters in June? Where and what kinds?
We're staying in the 6th, if that matters in any recommendations.
